MITE CONTROL IN PRODUCTION OF IBERIAN HAM

The mites, belonging to the order “Astigmata”, are one of the most important problems that affect the meat industry dedicated to the manufacture of products dry and cured, mainly to the ham, causing incalculable economic losses in this line of the economy. Considered pests , causes organoleptic alterations and even putrefaction of the product as well as being potential source spoilage and pathogenic bacteria. In this way, the mite control must involve the use of a method that allowed controlling their activity or eradicating them, however, it must take into account the nature of these meat products to avoid causing physical alterations, chemical or organoleptic to the final product or go against the process of elaboration of the ham.
